Tonight I wanted to share with you a recipe I made for Thanksgiving, Courtesy of Pinterest. If you are a pumpkin lover, you will love this simple recipe. It’s also perfect for the Fall/winter weather and the best part is it doesn’t require many ingredients. So without further ado, Let’s begin!
1 cup Pumpkin Puree (I just used the whole can)
2 Eggs +(1 egg for egg wash)
1 tsp Pumpkin Pie Spice
1/2 cup Sugar (Granulated or raw is fine)
1 tsp Vanilla (Imitation Vanilla works fine)
1 Whipped Cream ( Cool Whip works well too)
1 8 oz. (Cream Cheese)
Homemade All Butter Pie Crust or 2 pre-made, ready to roll pie crusts (Pie crust mix works as well)
*These will cook for 15-20 minutes and will take 30 minutes to prepare
1.) Grease and flour (or use non-stick cooking spray) a mini-muffin pan. Then set this aside
2.) Preheat oven to 350 degrees
3.) Roll the pie crust or dough on a floured surface with the floured rolling pin.
3.) Using a medium sized cup or biscuit cutter cut at least 12 rounds of each pie crust. If using homemade dough cut at least 24 rounds out.
4.) Press carefully each round into the mini muffin pan, use your fingers to round the ends into a pie crust.
6.) Brush egg wash from one egg to the top edges of each pie.
7.) Beat the cream cheese and sugar until smooth, using either an electric mixer or warming the cream cheese for 40 seconds to mix easily with the sugar. Add eggs one at a time, beating each until combined.
8.) Add pumpkin puree and beat to combine, then stir in the vanilla and pumpkin pie spice. (Save some of the pumpkin pie spice to put on top of the whipped cream or cool whip after baked)
9.) Spoon the mixture into each mini pie crust till it almost reaches the top.
10.) Bake for 15-20 minutes or until the edges are golden.
11.) Remove from oven and let the mini pies cool on a cooling rack or chill in the fridge for 30 minutes.
12.) Then top with whipped cream or cool whip and sprinkle with more pumpkin spice 🙂
